I am constantly impressed by really good bartenders. I don't mean the guy who can mix a handful of basic cocktails, but rather those cats who do that job in such a way that makes you believe that God put them on this earth to pour drinks! It's so much fun to watch them do their thing, especially at a place that's crazy busy and you can see that the tender has about sixteen drink orders running through his head. There was one bartender that worked at a club I used to play at in Dallas who was nothing short of amazing. She was always slammed, but always seemed to be able to focus on the moment. So that meant she filled your drink order in her head, as well as the conversation you were having with her. I would just sit back and watch her bounce from person to person and drink to drink and conversation to conversation.
The bartenders who really blow me away are the ones who not only mix a lot of cocktails, but also have a really deep knowledge of shots. If you go to a shot bar, obviously they are going to have dozens, if not hundreds, of shots to choose from. But shots is what they do there, and it's all they do. When a tender at an all-purpose bar has that same knowledge of shots as well as being up on all of the exotic mixed cocktails, I am truly in awe! And to be able to whip them up as quickly as they do is really quite impressive. I may end up being a lot of things in this lifetime, but a good bartender is not likely to be one of those things! I can make a screwdriver and a shot of whiskey. Anything else, I'm going to need a minute...and a good app!
