Summertime Fruit Salsa and Homemade Cinnamon Chips!

Nothing beats fresh food. For me, summer and fall are the times of year when all those fresh goodies are at their tasty peaks! To that end, today I'm creating a fresh fruit salsa and homemade tortilla chips on 'The Hungry Cowboy.' It's a quick and easy pairing that will be a perfect compliment to any summertime meal. In my mind's eye, I see you serving it as an appetizer before you take the brats off the grill and let your friends fill their plates with cold summer salads, grilled speds and an icy glass of lemonade! Enjoy, kids!
2 kiwis, peeled and diced
1 Fuji apple, peeled, cored and diced
1 pound strawberries
3 Tbl fruit preserves, any flavor
10 (10 inch) flour tortillas
2 Tbl cinnamon sugar
In a large bowl, mix all fruit together, along with the fruit preserves. Cover and chill in the refrigerator for at least 15 minutes.
Preheat oven to 350 degrees.
Coat one side of each flour tortilla with cooking spray. Cut into wedges and arrange in a single layer on a baking sheet. Sprinkle wedges with cinnamon sugar.
Bake in the preheated oven for about 8 minutes. Allow to cool for 10-15 minutes and serve with chilled fruit mixture.
